January is gray and cold, the only way to brighten things up is by adding one of my favorite tropical ingredients to the baking list: shredded coconut! These Coconut Pecan bars are delicious – chewy, buttery, crunchy and sweet. They’re also incredibly easy to whip up – get the recipe here and follow the simple instructions below.
Step 1 – Pre-heat the oven to 375 degrees. Spray a 9×13-inch baking pan with nonstick cooking spray, or line with foil.
Step 2 – In a medium mixing bowl, cream together the butter and ½ cup of the brown sugar until light and fluffy.
Step 3 – Add one cup flour to the mix until it forms a mixture that resembles fine crumbs, then press into the pan.
Step 4 – Bake for 12 minutes.
Step 5 – While the crust bakes, mix together the remaining 1 cup brown sugar and ¼ cup flour. Add the eggs, vanilla and salt. Mix to combine. Fold in the pecans and coconut.
Step 6 – Spread the coconut pecan mixture over the baked crust.
Step 7 – Bake for an additional 15 minutes, or until browned. Cool completely before cutting into bars to serve!
