Honey Walnut and Brie Biscuits

Ingredients
- 1 cup Diamond of California Chopped Walnuts
- 1/4 cup honey
- 1/4 cup water
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup brie, cut into small cubes
- 6 tbsp very cold unsalted butter
- 3/4 cup buttermilk
- 1 egg for egg wash
The Steps
- Pre heat the oven to 400 degrees.
- Combine the honey and water in a small sauce pan over high heat. Cook until mixture begins to boil.
- Add the walnuts and cook until nuts are completely coated and most of the liquid has cooked off.
- Transfer nuts to a parchment lined baking sheet, spreading them out to prevent clumping. Allow the nuts to cool completely.
- In a large bowl, combine the flour, baking powder, baking soda, and salt.
- Add the nuts and the brie to the mixture and toss slightly to coat them with the flour mixture.
- Cut the butter into small chunks and add to the flour. Using your hands, work the butter quickly into the flour.
- Add the buttermilk and mix with your hands until the dough comes together.
- Roll the dough out on a floured surface until it’s about 1 and ½ inches thick. Cut using a 2-inch round biscuit cutter and place on a parchment lined baking sheet. Once you have cut out all the biscuits, press the remaining dough back together without rolling to cut more biscuits.
- Brush the biscuits with egg before baking for 20 minutes or until golden brown.
