Ingredients
- 2 1/2 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 cup butter, soften to room temperature (1 stick is 1/2 cup)
- 1/2 cup sugar
- 1 cup brown sugar
- 2 eggs
- 2 tsp vanilla
- 1 cup Diamond of California® Chopped Pecans
- 1 1/2 cup rolled oats
- 1 cup chocolate chips
- 1/2 cup butterscotch chips
- 1/2 cup unsweetened shredded coconut
The Steps
- Sift the flour, baking powder, baking soda, salt and cinnamon into a bowl, set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, beat the butter for 1 minute. Add the sugar and brown sugar and continue to mix on medium-high speed for 3 minutes, until mixture is light and fluffy.
- Add the eggs and then the vanilla, scraping down the sides of the bowl and mixing until fully incorporated between each addition.
- Add the dry ingredients to the mixing bowl and mix until just combined.
- Fold chopped pecans, oats, chocolate chips, butterscotch chips and coconut into the dough.
- Chill the dough for 30 minutes and Pre-heat the oven to 375 degrees and line a baking sheet with parchment paper.
- Place 1 tbsp scoops of dough on the baking sheet, leaving 2 inches between each.
- Bake for 12-14 minutes until brown. Transfer to wire rack to cool.
