Ingredients

  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 cup butter, soften to room temperature (1 stick is 1/2 cup)
  • 1/2 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 tsp vanilla
  • 1 cup Diamond of California® Chopped Pecans
  • 1 1/2 cup rolled oats
  • 1 cup chocolate chips
  • 1/2 cup butterscotch chips
  • 1/2 cup unsweetened shredded coconut

The Steps

  1. Sift the flour, baking powder, baking soda, salt and cinnamon into a bowl, set aside.
  2. In the bowl of an electric mixer fitted with the paddle attachment, beat the butter for 1 minute. Add the sugar and brown sugar and continue to mix on medium-high speed for 3 minutes, until mixture is light and fluffy.
  3. Add the eggs and then the vanilla, scraping down the sides of the bowl and mixing until fully incorporated between each addition.
  4. Add the dry ingredients to the mixing bowl and mix until just combined.
  5. Fold chopped pecans, oats, chocolate chips, butterscotch chips and coconut into the dough.
  6. Chill the dough for 30 minutes and Pre-heat the oven to 375 degrees and line a baking sheet with parchment paper.
  7. Place 1 tbsp scoops of dough on the baking sheet, leaving 2 inches between each.
  8. Bake for 12-14 minutes until brown. Transfer to wire rack to cool.
