Spiced Pumpkin Bread With Walnuts

Ingredients
- Streusel:
- 1 cup flour
- 1 cup firmly packed light brown sugar
- 3/4 teaspoon pumpkin pie spice
- 1/8 teaspoon salt
- 1/4 cup (1/2 stick) cold butter, cut into chunks
- 1/2 cup Diamond of California® Chopped Walnuts
- Bread:
- 1 cup Diamond of California® Chopped Walnuts
- 2 1/4 cups flour
- 2 cups granulated sugar
- 2 tablespoons pumpkin pie spice
- 1 1/2 teaspoons baking soda
- 1 1/4 teaspoons salt
- 4 eggs
- 1 can (15 ounces) pumpkin
- 1 cup vegetable oil
The Steps
- For the Streusel, mix flour, brown sugar, pumpkin pie spice and salt in medium bowl. Cut in butter with pastry blender or 2 knives until coarse crumbs form. Mix in walnuts.
- For the Pumpkin Bread, spread walnuts on shallow baking pan. Toast in preheated 350°F oven 5 to 10 minutes or until lightly browned, stirring occasionally.
- Meanwhile, grease and flour two 9×5-inch loaf pans. Mix flour, granulated sugar, pumpkin pie spice, baking soda and salt in large bowl. Set aside.
- Beat eggs in medium bowl. Stir in pumpkin and oil. Add to flour mixture; stir just until moistened. Stir in toasted walnuts. Divide batter evenly between prepared pans. Sprinkle top of each loaf with Streusel.
- Bake 55 to 60 minutes or until toothpick inserted into center comes out clean. Cool in pans 10 minutes. Remove from pans. Cool completely on wire rack.
