Air Fryer Walnut Crusted Salmon

- 3-4 Wild Salmon Fillets
- 1 Cup Diamond of CA walnuts
- 1 tbsp avocado oil
- 1 lemon juiced and zested
- 1 tbsp dijon mustard
- 2-3 cloves of garlic
- 1/3 cup dill (loosely packed)
- salt & pepper to taste
The Steps
Place walnuts, avocado oil, lemon juice, dijon mustard, zest, garlic, dill, salt, and pepper in a food processor and pulse a few times until combined (but not blended) by hitting the pulse setting on and off. The mixture should be crunchy & sticky and not so much a paste.
Remove skin from salmon filets. Spray air fryer with avocado oil. Spoon walnut topping on top of filets and then add the filets to an air fryer. Spray the top of the filets (after coating) with a little more avocado oil to prevent the walnuts from burning.
Set air fryer to 350 & air fry for 10-13 minutes depending on the size of your salmon filets. Insert a thermometer in the thickest part of the fillet and look for it to read a temperature of 125-145 degrees F.
