Almond Flour Shortbread

Ingredients
- 1 cup unsalted butter, room temperature (2 sticks)
- 3/4 cup confectioners sugar
- 1 cup almond flour
- 1 3/4 cup all-purpose flour
- 1/2 tsp salt
- 40 whole Diamond of California Almonds
The Steps
- In the bowl of an electric mixer, beat the butter until it’s light and fluffy. About 3 minutes.
- Add the sugar and mix to combine.
- Scrape down the sides of the bowl, then add the almond flour, all-purpose flour and salt. Mix until just combined.
- Refrigerate the dough for 30 minutes.
- Pre-heat the oven to 325 degrees. Transfer the dough to a lightly floured surface and roll out in to a ½ inch thick sheet.
- Use a knife to cut the dough into 1 inch by 2 inch rectangles. Press one almond into the center of each cut-out.
- Transfer the cookies to a parchment lined baking sheet, spacing them 2-inches apart.
- Bake for 8 to 10 minutes or until edges are golden brown.
- Transfer to a wire rack to cool before serving.
