Beet Salad

Ingredients
- 4 cups mixed greens
- 1/2 cup olive oil
- 1/4 cup white balsamic vinegar
- 1 tsp honey
- 2 tbsp Dijon mustard
- 1 tsp salt
- 1 tsp pepper
- 4 beets, roasted and sliced
- 1/4 cup crumbled goat cheese
- 1/2 cup Diamond of California® Chopped Pecans
The Steps
- Place the greens in a large bowl. Set aside.
- To make the dressing, whisk together the olive oil, white balsamic vinegar, honey, Dijon, salt and pepper. Pour over the greens and toss to coat.
- Divide the greens between four plates. Top each with sliced beets, a sprinkle of goat cheese and toasted pecans.
