Chocolate Chip Walnut Cookie Cake

Ingredients
- 1/2 cup (1 stick) butter, soften to room temperature
- 1/4 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1 tsp vanilla
- 1 1/4 cup flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup Diamond of California Chopped Walnuts
- 1/4 cup dark chocolate chunks
- 1/4 cup white chocolate chunks
- 1/4 cup milk chocolate chunks
The Steps
- Pre-heat the oven to 375 and grease an 8-in cake pan.
- Sift the flour, salt and baking soda into a bowl, set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, beat the butter for 1 minute. Add the sugar and brown sugar and continue to mix on medium-high speed for 3 minutes, until mixture is light and fluffy.
- Add the egg and then the vanilla, scraping down the sides of the bowl and mixing until fully incorporated between each addition.
- Add the dry ingredients to the mixing bowl and mix until just combined.
- Reserve 1 tbsp each of the walnuts, dark chocolate, white chocolate and milk chocolate, then add the remaining to the dough and use a spatula to combine.
- Scoop all of the dough into your prepared pan and use a spatula to spread it in an even layer. Press the reserved walnuts and chocolates into the dough and bake for 12-14 minutes.
- Serve with a scoop of vanilla ice cream on top!
