Coconut Pineapple Macadamia Popsicles

Ingredients
- 1 can coconut milk
- 1 cup fresh pineapple, roughly chopped
- 1/2 cup Greek yogurt
- 1 cup white chocolate
- 1/2 cup Diamond of California® Macadamia Nuts, finely chopped
The Steps
- In a blender, combine the coconut milk, ½ cup of pineapple and greek yogurt. Blend on high until well combined.
- Pour mixture into 8 popsicle molds until molds are about ½ full. Add the remaining pineapple chunks to the molds, then top with remaining coconut milk mixture.
- Cover and insert popsicle sticks. Freeze for at least 2 hours.
- Melt the white chocolate over a double boiler and then allow it to cool slightly.
- Unmold the popsicles, then dip the top of one in white chocolate. Quickly sprinkle with chopping macadamia nuts and transfer to a parchment lined baking sheet. Repeat with remaining popsicles,
- Return to freezer for 10 more minutes to set before serving.
