Double Chocolate Walnut Zucchini Bread

Ingredients
- 1 1/2 cups shredded raw zucchini
- 1 cup all-purpose flour
- 3/4 teaspoon baking soda
- 1/2 cup unsweetened natural cocoa powder, sifted
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup canola oil
- 1/2 cup granulated white sugar
- 1/2 cup brown sugar
- 1 1/2 teaspoon pure vanilla extract
- 3/4 cup semi sweet or bittersweet chocolate chips
- 2/4 cups Diamond of California® Chopped Walnuts
The Steps
- Preheat the oven to 350 and grease an 8×5 loaf pan.
- Spread the zucchini out on a paper towel and blot with another paper towel to remove some of the moisture.
- In a large bowl, whisk together the flour, cocoa powder, baking powder and salt.
- In another bowl, whisk together the eggs, canola oil, white sugar, brown sugar and vanilla extract. Pour the wet ingredients into the dry ingredients and stir to combine.
- fold in the shredded zucchini, chocolate chips and walnuts.
- Pour the batter into the prepared pan and bake for 45-50 minutes or until a tooth pick inserted in the center comes out clean.
- Allow the bread to cool in the pan for 5 minutes before turning it onto a wire rack to finish cooling.
