Honey Pine Nut Tart

Ingredients
- Tart:
- 3/4 cup flour
- 1/4 cup sugar
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1/4 cup butter (1/2 stick)
- 1 egg
- 1 egg yolk
- Filling:
- 3/4 cup Diamond of California Pine Nuts
- 1/2 cup honey
- 1/4 cup sugar
- 1/4 cup heavy cream
- 1/2 cup butter
- 1 egg
- 1/2 tsp salt
The Steps
- Preheat the oven to 325 degrees and liberally butter a 6 inch tart pan with a removable bottom.
- Add the flour, sugar, salt and baking powder to a food processor and pulse briefly to combine.
- Add the butter and pulse until mixture resembles small peas.
- Add the egg and the yolk, pulse until combined.
- Press the tart dough into the bottom of the pan. Poke a few small holes along the bottom with a fork, then place it in the freezer while you make the filling.
- In a small sauce pan over medium-high heat, combine the honey, and salt. Cook until the sugar melts and the mixture is just starting to bubble. Remove from heat and stir in the butter and cream. Whisk in the egg.
- Remove the tart crust from the freezer and sprinkle the pine nuts in, evenly distributing them on the bottom of the crust.
- Pour the honey mixture over the top, using a spoon to redistribute the pine nuts if necessary.
- Bake for 35 minutes or until filling is set and crust is golden brown.
- Allow the tart to cool in the pan before pushing the bottom up to remove it.
