One Pot Mac and Cheese with Butternut Squash and Walnuts

Ingredients
- 2 cups dry elbow pasta
- 2 cups butternut squash, cut into small chunks
- 2 cups whole milk
- 1/4 cup unsalted butter
- 1 teaspoon salt
- 1/4 teaspoon nutmeg
- 1 1/2 cups grated cheddar cheese
- 1/4 cup grated parmesan cheese
- 3/4 cup Diamond of California Chopped Walnuts
The Steps
- In a large pot over medium heat, combine the dry pasta, butternut squash, milk, butter, nutmeg and salt. Cook until mixture comes to a boil then reduce the heat to low and allow it to cook for another 10 minutes.
- Stir in the cheddar and parmesan cheeses and continue stirring until a thick sauce has formed.
- Remove from heat and add the walnuts, stir to combine and then serve!
