Pine Nut Cacio e Pepe

- 1 pound spaghetti or fettuccini noodles
- 2 tbsp unsalted butter
- 1/2 cup plus 2 tbsp grated parmesan cheese
- 2 tsp ground black pepper
- 1 tsp salt
- 1/2 cup Diamond of California® Pine Nuts, toasted
- fresh basil to garnish
The Steps
- Bring a large pot of water to a boil and cook the pasta to al dente, about 9 minutes.
- Reserve 1 cup of cooking water, then drain the pasta.
- Add the butter to the cooking pot and melt over medium heat.
- Add the cooked pasta, ½ cup of parmesan, and ½ cup of the cooking water. Season with salt and pepper.
- Toss until all noodles are coated, adding additional cooking water to thin if necessary.
- Divide pasta between 4 bowls and sprinkle pine nuts, and remaining cheese on top. Garnish with fresh basil before serving.
