Summer Caprese Pasta Salad

Ingredients
- 2 cups cooked penne pasta
- 10 cherry tomatoes, cut into halves
- 1 peach, pitted and thinly sliced
- 12 mini balls of fresh mozzarella
- 10 basil leaves
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- salt and pepper
- 1/2 cup Diamond of California® Pine Nuts
The Steps
- Combine the pasta, tomatoes, peach slices, mozzarella and basil in a large bowl. In a small bowl, whisk together the olive oil, vinegar and a pinch of salt and pepper. Pour over the pasta mixture and toss to combine.
- Sprinkle pine nuts over top before serving. Serve cold
