Thai Almond Butter Dip with Grilled Chicken Skewers

Ingredients

  • 1 cup plus
  • 1 tbsp Diamond of California Almonds, divided
  • 1/4 cup walnut oil
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp toasted sesame oil
  • Juice from 1/2 lime
  • 1 tsp salt
  • 2 boneless, skinless chicken breasts
  • 8 bamboo skewers
  • 1 tbsp olive oil
  • Assorted vegetables like bell peppers and snap peas

The Steps

  1. Place 1 cup almonds in a food processor and grind until a smooth almond butter forms, about 10 minutes.
  2. Transfer the almond butter a bowl and add the walnut oil, soy sauce, honey, sesame oil, lime juice and salt.
  3. Chop remaining almonds and sprinkle on top of almond butter dip.
  4. Heat the olive oil over medium-high heat in a grill pan.
  5. Slice each chicken breast into 4 strips, length-wise, then add the the grill pan. Cook for 3 minutes on each side or until cooked through.
  6. Place each chicken strip on a skewer, serve with fresh vegetables and Thai almond dip.
