Walnut Feta Sliders

Ingredients
- 3/4 cup refried beans (make sure they are vegetarian)
- 1 cup Diamond of California walnuts
- 1 cup cooked brown rice
- 2 teaspoons chopped fresh dill
- 1/2 teaspoon garlic powder
- 2 1/2 teaspoons minced dried onion
- 1 teaspoon ground black pepper
- 1/4 cup bread crumbs
- 1/2 cup feta crumbles (plant based feta also works)
- 1/4 cup kalamata olives, pitted & chopped
- 2 tablespoons vegetable oil, plus more for frying
The Steps
- In a food processor add the walnuts and cooked brown rice and pulse until the mixture is the size of coarse meal.
- Add the walnut mixture to a large bowl stir in the refried beans, dill, garlic powder, minced dried onion, black pepper, bread crumbs, and vegetable oil until combined. Fold in the feta crumbles.
- Using a 2 ounce portion scoop, divide the filling evenly. Form into a small puck shaped disc about 2 inches in diameter. You should get 9-11 slider sized burgers.
- Add a tablespoon of vegetable oil to a skillet and warm over medium heat. When the oil is hot add the burger in batches, making sure not to crowd the pan.
- Cook on each side until golden and crunchy, about 4-5 minutes. Flip and repeat.
- Serve on slider buns with your favorite toppings or condiments.
